Vegan coconut porridge

Here is one of my favourite breakfasts recently. I find this recipe nutritious, filling and just delicious. Especially if you’re vegan, this breakfast is filled with healthy fats and omegas from the seeds. You can always alter this dish to cows milk or another dairy free milk if you prefer.

Ingredients:

Base –

50g porridge oats

10g coconut sugar

115ml soya milk

Toppings

Desiccated coconut

Ground flax seeds

Flaked almonds

Natural coconut syrup

Fresh blueberries

(I sometimes will add chai seeds too)

Method:

1. Weigh the porridge and coconut sugar then put in a sauce pan. Add the soya milk and stir until all combined.

2. Put on a medium heat for 3 – 4 minutes whilst continuously stiring. Once it is to your desired consistency, transfer to a bowl.

3. Add 1-2 teaspoons of each topping and a drizzle the natural coconut syrup on top and enjoy.

*If you don’t have much of a sweet tooth you can add less coconut sugar to the base.
